White Bean Chicken Chili.

Since we had some snow storms on the way last night, I wanted to make something easy and hearty for a cold, winter's night. And one of my favorite things to make is White Bean Chicken Chili - it's so easy, and Brad really loves it!


So, here goes - you'll need:
- 1 pkg. McCormick Seasoning Mix for White Chicken Chili
- 1 tbsp. oil
- 1 lb. boneless skinless chicken breasts
- 1 cup water
- 1 can white beans, undrained - I especially like pinto beans!



Boil your chicken for 15-20 minutes - make sure there is no pink.

This is what your chicken will look like when it is finished boiling - take a piece out and cut it open to be sure there is no pink.Take your chicken out and let it cool. Once it is cool, take a pair of kitchen shears and cut the chicken up into 1/2" pieces.

Here's all the chicken cut up.

Heat the oil in a skillet and then add the chicken - stir for 3 to 5 minutes.
Stir in the seasoning mix, water and beans. Bring to a boil; cover. Reduce heart and simmer for 10 minutes, stirring occasionally.
Here is the chili in the skillet, boiling.
You can add sour cream, cheese, sliced avocados, chopped tomatoes to add a little something extra! I hope you will enjoy this easy meal as much as Brad and I do!
